People often ask why we put two cuisines on one sign. Here is the short version of what we are about…
Sushi is Japan's craft of seasoned rice and seafood, cut, pressed and rolled to order, then carried out the moment it leaves the board.
Thai cooking is built on balance: chilies, lemongrass, coconut milk, lime and fish sauce brought into line so heat, sweetness and sourness all land in the same mouthful. Our red curry, lemongrass chicken and black pepper beef come straight out of that tradition, each served over steamed rice.
All You Can Eat is how most guests eat here. Rather than one round for the whole table, you order in small waves from the iPad at your seat, as many waves as you like, and every plate leaves the kitchen freshly made instead of sitting out on a buffet line under a heat lamp.
Dim Sum is our third counter: siu mai, har gow, BBQ pork buns and cream custard buns, all steamed in bamboo and brought over still hot.
Sushi & Thai puts all three under one roof in downtown Lethbridge, with robot servers working the aisles and a dining room built for unhurried, table-filling dinners. Come hungry, order in waves, and take your time — most people here do.
Cut Fresh, Rolled to Order
Nothing on our sushi bar is prepared ahead. Fish is cut once your order reaches the counter, rice is seasoned in small batches through the day, and each roll is built, sliced and plated right there. That is why a Rainbow Roll arrives with the salmon still cool and a Volcano Roll arrives with its topping still crackling. The Thai side runs on the same rule — curries are finished in the wok per order rather than held in a pot. Whether you order one plate or fifteen, every one is made the same way.

Had a great dinner at Sushi & Thai! The ambiance was cozy and clean, and the servers were super friendly and attentive. The salmon sashimi was fresh and beautifully presented, and the fried tofu appetizer was crispy and flavorful. Excellent value for the quality-definitely recommend!

We come here pretty much every weekend and we LOVE this place. It’s decently priced for lunch and dinner, the sushi variation is amazing, a stand out being the spicy salmon sushi rolls. The thai too is to die for, with their kung po chicken which we get at least six bowls of every time. The service is quick and super easy to understand the menu, the servers there are super attentive and really lovely! If you love sushi and all you can eat sushi this is the place to go
